It all began in 2010 with a goal to heal the gut, improve overall health, boost the immune system, and diversify our probiotic consumption. We set out to make both healthy and traditional foods. Unlike vinegar based sauerkraut, our kraut is fermented for up to 4 weeks using a traditional pickling method called lacto fermentation. Our final product is not only delicious; but it's always raw and teeming with live active cultures. Inspired by our travels and a love of all things exotic, we've taken your Grandma's recipe and kicked it up a few notches. Boulanger Fermentations focuses on sustainability, locally sourced ingredients, and having a minimal impact on the environment.


Kraut 'Jerky'

We prepare the best veggies, herbs, and spices we can find, add sea salt, and let the traditional preservation method of lacto-fermentation go to work for up to a month. Once complete, we low temp dehydrate our raw live sauerkraut for about 20+ hours so that it retains all the probiotic goodness and healthy enzymes.





Given the War on Bacteria so culturally prominent in our time, the well-being of our microbial ecology requires regular replenishment and diversification now more than ever.

Ferment For Life

Why do we ferment? The answer to that question is at the heart of our passion. Dealing with gut issues since the 90's fostered a strong desire for more knowledge about health and the quality of our modern food system. Consuming as much emerging scientific data as possible regarding our micro-biome, bacteria, and gut health drove us to experimentation and ideation. It all started with popular fermented products like kombucha, kefir, and especially sauerkraut! We were in hot pursuit of better gut health to balance and enhance our micro-biome. We love traveling and love exotic foods, so naturally, we love incorporating these flavors from all over the world. We want to help people learn more about probiotic diversity, the role of gut health, our micro-biome, and how that all affects total health and immunity. Lastly we really want people to enjoy health foods and help more people realize good food, tastes good!
